I hate to throw out food and thankfully this cake is delicious (approved by grown ups and kids).<\/p>\n<p>This cake works because mayo contains oil and eggs – the usual ingredients in a cake. The origin of this recipe comes from the Depression Era (1930’s) and it’s made appearances during WWII.<\/p>\n<p>You may ask, “why make a cake with mayonnaise”? It’s a quick mix, easy and a good match for those who may not have the confidence to bake a more traditional cake from scratch.<img data-recalc-dims=\"1\" decoding=\"async\" class=\"aligncenter size-full wp-image-32344\" src=\"https:\/\/i0.wp.com\/www.kalofagas.ca\/wp-content\/uploads\/2021\/06\/20210528_191133-01-scaled.jpeg?resize=800%2C1067&ssl=1\" alt=\"\" width=\"800\" height=\"1067\" srcset=\"https:\/\/i0.wp.com\/www.kalofagas.ca\/wp-content\/uploads\/2021\/06\/20210528_191133-01-scaled.jpeg?w=1535&ssl=1 1535w, https:\/\/i0.wp.com\/www.kalofagas.ca\/wp-content\/uploads\/2021\/06\/20210528_191133-01-scaled.jpeg?resize=768%2C1025&ssl=1 768w, https:\/\/i0.wp.com\/www.kalofagas.ca\/wp-content\/uploads\/2021\/06\/20210528_191133-01-scaled.jpeg?resize=1151%2C1536&ssl=1 1151w\" sizes=\"(max-width: 800px) 100vw, 800px\" \/><\/p>\n<p>Your cake won’t taste like a BLT, the mayo cannot be tasted and you’re going to have a moist chocolate cake, which goes well with a Nutella frosting I’ve included as well.<\/p>\n<p>Enjoy a piece of food history!<\/p>\n<p><img data-recalc-dims=\"1\" decoding=\"async\" class=\"aligncenter size-full wp-image-32343\" src=\"https:\/\/i0.wp.com\/www.kalofagas.ca\/wp-content\/uploads\/2021\/06\/20210530_184529-02-scaled.jpeg?resize=800%2C1119&ssl=1\" alt=\"\" width=\"800\" height=\"1119\" srcset=\"https:\/\/i0.wp.com\/www.kalofagas.ca\/wp-content\/uploads\/2021\/06\/20210530_184529-02-scaled.jpeg?w=1464&ssl=1 1464w, https:\/\/i0.wp.com\/www.kalofagas.ca\/wp-content\/uploads\/2021\/06\/20210530_184529-02-scaled.jpeg?resize=768%2C1074&ssl=1 768w, https:\/\/i0.wp.com\/www.kalofagas.ca\/wp-content\/uploads\/2021\/06\/20210530_184529-02-scaled.jpeg?resize=1098%2C1536&ssl=1 1098w\" sizes=\"(max-width: 800px) 100vw, 800px\" \/><\/p>\n<p><strong>Chocolate Mayonnaise Cake<\/strong><\/p>\n<p><em>1 cup semi sweet chocolate chips, divided<\/em><\/p>\n<p><em>1\/2 cup cocoa powder<\/em><\/p>\n<p><em>1 Tbsp. instant espresso powder<\/em><\/p>\n<p><em>1 1\/2 cup all-purpose flour<\/em><\/p>\n<p><em>3\/4 tsp. baking soda<\/em><\/p>\n<p><em>1 tsp. baking powder<\/em><\/p>\n<p><em>1\/2 tsp. salt<\/em><\/p>\n<p><em>3\/4 cup sugar<\/em><\/p>\n<p><em>3\/4 cup mayonnaise<\/em><\/p>\n<p><em>1 large egg<\/em><\/p>\n<p><em>1 teaspoon vanilla extract<\/em><\/p>\n<p><em>Pre-heated 350F oven<\/em><\/p>\n<p><strong><em>Nutella Butter Frosting<\/em><\/strong><\/p>\n<p><em>3\/4 cup unsalted butter, room temp.<\/em><\/p>\n<p><em>3 cups powdered sugar<\/em><\/p>\n<p><em>1\/2 cup Nutella<\/em><\/p>\n<p><em>1 tsp. vanilla extract<\/em><\/p>\n<p><em>pinch of salt<\/em><\/p>\n<p><em>1\/4 cup cream (or milk)<\/em><\/p>\n<p> <\/p>\n<ol>\n<li>Grease and line a 9 x 9″ square or similar round pan with parchment paper.<\/li>\n<li>To a bowl, add 1\/2 cup chocolate chips, cocoa powder, coffee and 1 cup of boiling water. Transfer to a bowl and add the cocoa powder. Stir until the chocolate chips have melted.<\/li>\n<li>Meanwhile, in another bowl add the flour, baking powder, baking soda and salt and mix with a fork.<\/li>\n<li>To the wet ingredients, add the sugar, mayonnaise, egg and vanilla and stir with a for about a minute or until incorporated.<\/li>\n<li>Add the dry into wet ingredients, mix with a rubber spatula. Add remaining chocolate chips and fold in.<\/li>\n<li>Transfer to your baking vessel, smooth top to even out and place in your pre-heated oven for 35-40 minutes or until an inserted toothpick comes out clean.<\/li>\n<li>Take out the oven, allow to cool before spreading frosting. Place a plate on top of the cake and invert. Remove the parchment and you’ll have a smooth cake top.<\/li>\n<li>Using a hand mixer. Add the butter and beat for a couple of minutes or until smooth.
