{"id":128,"date":"2007-10-19T14:58:00","date_gmt":"2007-10-19T18:58:00","guid":{"rendered":"http:\/\/kalofagas.ca\/?p=128"},"modified":"2007-10-19T14:58:00","modified_gmt":"2007-10-19T18:58:00","slug":"thai-clubhouse-sandwich","status":"publish","type":"post","link":"https:\/\/www.kalofagas.ca\/2007\/10\/19\/thai-clubhouse-sandwich\/","title":{"rendered":"Thai Clubhouse Sandwich"},"content":{"rendered":"<p>One of the advantages of surfing others’ food blogs is seeing visually enticing foods but the recipes do not always use traditional ingredients one keeps in their pantry.<\/p>\n<p>Katerina of Daily Unadventures in Cooking made a lovely <a href=\"http:\/\/dailyunadventures.blogspot.com\/2007\/07\/curried-mango-chicken-salad.html\">Curried Mango Chicken Salad<\/a> and I had all the ingredients except for the curry powder (it’s almost taboo in my home).<\/p>\n<p>I went to my local Asian market and I found a mild curry powder and my thought process was I could always kick-up the heat with something else.<\/p>\n<p>Not to make a carbon-copy of Katerina’s sandwich, I thought of what flavours come from Asia? Asian food is about yin-yang, hot-cold, contrasts, soft and crisp and I came up with the Thai Clubhouse Sandwich!<a onblur=\"try {parent.deselectBloggerImageGracefully();} catch(e) {}\" href=\"https:\/\/i0.wp.com\/bp2.blogger.com\/_V8CJ9SigOho\/Rp-sqANJ91I\/AAAAAAAAAXM\/hM5ZY4vWhDc\/s1600-h\/IMG_1168.jpg\"><img data-recalc-dims=\"1\" decoding=\"async\" style=\"margin: 0pt 0pt 10px 10px; float: right; cursor: pointer;\" src=\"https:\/\/i0.wp.com\/bp2.blogger.com\/_V8CJ9SigOho\/Rp-sqANJ91I\/AAAAAAAAAXM\/hM5ZY4vWhDc\/s320\/IMG_1168.jpg?w=800&ssl=1\" alt=\"\" id=\"BLOGGER_PHOTO_ID_5088975941561612114\" border=\"0\" \/><\/a><\/p>\n<p><span style=\"font-style: italic;\">2 boneless, skinless chicken breasts, cubed<\/span> <span style=\"font-style: italic;\"><br \/>1 Tbsp yogurt<\/span> <span style=\"font-style: italic;\"><br \/>2 Tbsp mayonnaise<\/span><br \/><span style=\"font-style: italic;\">1 green mango, diced<\/span> <span style=\"font-style: italic;\"><br \/>1\/3 cup chopped fresh cilantro<\/span> <span style=\"font-style: italic;\"><br \/>2 green onions, finely chopped<\/span> <span style=\"font-style: italic;\"><br \/>1\/4 sweet red bell pepper, diced<\/span> <span style=\"font-style: italic;\"><br \/>a squirt of Sriracha hot sauce<\/span><br \/><span style=\"font-style: italic;\">a squeeze of lime juice<\/span> <span style=\"font-style: italic;\"><br \/>salt & pepper to taste<\/span><\/p>\n<ol>\n<li>Combine all of the above ingredients in a bowl and mix well with a spoon.
