It’s a standard dish during Lent, appears on the Greek kitchen table on many a Friday when meat is not consumed and frankly, one of the most enjoyable yet rustic dishes in the Greek repertoire of cooking.<\/p>\n<p><img data-recalc-dims=\"1\" decoding=\"async\" class=\"aligncenter size-full wp-image-1086\" title=\"img_3074\" src=\"https:\/\/i0.wp.com\/kalofagas.ca\/wp-content\/uploads\/2009\/03\/img_3074.jpg?resize=480%2C413&ssl=1\" alt=\"img_3074\" width=\"480\" height=\"413\" srcset=\"https:\/\/i0.wp.com\/www.kalofagas.ca\/wp-content\/uploads\/2009\/03\/img_3074.jpg?w=480&ssl=1 480w, https:\/\/i0.wp.com\/www.kalofagas.ca\/wp-content\/uploads\/2009\/03\/img_3074.jpg?resize=300%2C258&ssl=1 300w\" sizes=\"(max-width: 480px) 100vw, 480px\" \/>This soup is best enjoyed with some good, homemade bread, some olives and some kind of pickled vegetable. A family fave are these <a href=\"https:\/\/kalofagas.ca\/2007\/09\/24\/pickled-red-cherry-peppers\/\" target=\"_self\">pickled cherry tomatoes <\/a>(either hot or sweet). With the bread, olives and pickled cherry peppers (or your preferred pickled vegetables), this becomes a substantive and healthy meal.<\/p>\n<p><span style=\"font-weight: bold;\">Fassoulada<\/span> <em><strong>(\u03c6\u03b1\u03c3\u03bf\u03bb\u03ac\u03b4\u03b1)<\/strong><\/em><\/p>\n<p><span style=\"font-style: italic;\">1 cup of small dry (white) navy beans<\/span><br \/>\n<span style=\"font-style: italic;\">1 large stalk of celery, halved lengthwise then cut into 1\/2 inch pieces<\/span><br \/>\n<span style=\"font-style: italic;\">1 large carrot, halved then cut into 1\/2 inch pieces on a bias<\/span><br \/>\n<span style=\"font-style: italic;\">2 medium onions, diced<\/span><br \/>\n<span style=\"font-style: italic;\">1\/2 cup of pomodoro or tomato puree (passata)<\/span><br \/>\n<span style=\"font-style: italic;\">1\/2 cup olive oil<\/span><br \/>\n<span style=\"font-style: italic;\">2 bay leaves<\/span><br \/>\n<span style=\"font-style: italic;\">1 whole chile pepper<\/span><br \/>\n<span style=\"font-style: italic;\">2 tsp. of smoked paprika<\/span><br \/>\n<span style=\"font-style: italic;\">8 cups of water<\/span><br \/>\n<span style=\"font-style: italic;\">salt to taste<img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1089\" title=\"img_3078\" src=\"https:\/\/i0.wp.com\/kalofagas.ca\/wp-content\/uploads\/2009\/03\/img_3078.jpg?resize=480%2C399&ssl=1\" alt=\"img_3078\" width=\"480\" height=\"399\" srcset=\"https:\/\/i0.wp.com\/www.kalofagas.ca\/wp-content\/uploads\/2009\/03\/img_3078.jpg?w=480&ssl=1 480w, https:\/\/i0.wp.com\/www.kalofagas.ca\/wp-content\/uploads\/2009\/03\/img_3078.jpg?resize=300%2C249&ssl=1 300w\" sizes=\"(max-width: 480px) 100vw, 480px\" \/><br \/>\n<\/span><\/p>\n<ol>\n<li>The night before you are to make this soup, soak the beans in water overnight.<\/li>\n<li>Drain the water from the beans and place them into a pressure cooker. Now add all of the remaining ingredients into the pressure cooker.<\/li>\n<li>Close the lid of your cooker (according to mfgrs\u2019 instructions) and place in on high heat. You should have the cooker whistling in about 20 minutes.<\/li>\n<li>Lower your heat to medium and allow the soup to simmer in the cook for an hour.
