Risotto Like Gemista
Today’s recipe is a risotto that will take just like Gemista. Yes! I served this as one of my courses at a recent Greek Supper Club and it was a hit. The risotto get’s the “gemista” flavour from roasting and pureeing tomatoes and peppers. Clever!
Chickpea Salad with Beets & Feta
This salad is easy – basically dump and mix. Like any recipe, you can adjust the amounts in the ingredients.
Seafood Giouvarlakia Soup
The soup is finished with an egg/lemon emulsion we call “Avgolemono” and it does deliver!
Salmon Tartare
When making a salmon tartare, one can choose Asian flavours or stay western, which I did: mustard, some mayo, red onions, cucumber, capers, citrus juice, fresh dill and chives.

The classic Greek version of cabbage rolls (Λαχανοντολμάδες) are finished with a creamy Avgolemono sauce, which is an emulsion of beaten eggs/lemon juice that is slowly incorporated with hot stock.
