While fried is everyone’s favourites, grilled calamari should get equal billing. It’s easier to prepare, less fuss and mess and it cooks quickly.
Grilled Liver with Pickled Onions
This dish is offal good – grilled liver with pickled onions. You can use lamb, pork or beef/veal liver. The liver gets a quick marinade in olive oil, salt and dried Greek oregano then it gets quickly grilled over high heat.
Greek Style Roast Chicken Thighs
The flavour profile here is classic Greek: lemon, garlic, salt, pepper, dried Greek oregano. This chicken is best with roast potatoes or fries and it’s doable weeknight or weekend.
Kataifi Galaktoboureko
This past summer I had a version made with Kataifi, a pastry that looks like shredded wheat and it was tremendous: the aroma of butter, notes of citrus and vanilla. Dreamy!
