I hate to throw out food and thankfully this cake is delicious (approved by grown ups and kids).</p>
<p>This cake works because mayo contains oil and eggs &#8211; the usual ingredients in a cake. The origin of this recipe comes from the Depression Era (1930&#8217;s) and it&#8217;s made appearances during WWII.</p>
<p>You may ask, &#8220;why make a cake with mayonnaise&#8221;? <p>Your cake won&#8217;t taste like a BLT, the mayo cannot be tasted and you&#8217;re going to have a moist chocolate cake, which goes well with a Nutella frosting I&#8217;ve included as well.</p>

<p><strong>Chocolate Mayonnaise Cake</strong></p>
<p><em>1 cup semi sweet chocolate chips, divided</em></p>
<p><em>1/2 cup cocoa powder</em></p>
<p><em>1 Tbsp. instant espresso powder</em></p>
<p><em>1 1/2 cup all-purpose flour</em></p>
<p><em>3/4 tsp. baking soda</em></p>
<p><em>1 tsp. baking powder</em></p>
<p><em>1/2 tsp. salt</em></p>
<p><em>3/4 cup sugar</em></p>
<p><em>3/4 cup mayonnaise</em></p>
<p><em>1 large egg</em></p>
<p><em>1 teaspoon vanilla extract</em></p>
<p><em>Pre-heated 350F oven</em></p>
<p><strong><em>Nutella Butter Frosting</em></strong></p>
<p><em>3/4 cup unsalted butter, room temp.</em></p>
<p><em>3 cups powdered sugar</em></p>
<p><em>1/2 cup Nutella</em></p>
<p><em>1 tsp. vanilla extract</em></p>
<p><em>pinch of salt</em></p>
<p><em>1/4 cup cream (or milk)</em></p>
<p>&nbsp;</p>
<ol>
<li>Grease and line a 9 x 9&#8243; square or similar round pan with parchment paper.</li>
<li>To a bowl, add 1/2 cup chocolate chips, cocoa powder, coffee and 1 cup of boiling water. Transfer to a bowl and add the cocoa powder. Stir until the chocolate chips have melted.</li>
<li>Meanwhile, in another bowl add the flour, baking powder, baking soda and salt and mix with a fork.</li>
<li>To the wet ingredients, add the sugar, mayonnaise, egg and vanilla and stir with a for about a minute or until incorporated.</li>
<li>Add the dry into wet ingredients, mix with a rubber spatula. Add remaining chocolate chips and fold in.</li>
<li>Transfer to your baking vessel, smooth top to even out and place in your pre-heated oven for 35-40 minutes or until an inserted toothpick comes out clean.</li>
<li>Take out the oven, allow to cool before spreading frosting. Place a plate on top of the cake and invert. Remove the parchment and you&#8217;ll have a smooth cake top.</li>
<li>Using a hand mixer. Add the butter and beat for a couple of minutes or until smooth. Add the remaining ingredients and beat on low speed until incorporated then increase speed and beat for 2 minutes.</li>
<li>You may cut the cake in half and spread frosting in middle layer and top or simply spread all frosting on the top.</li>
<li>If making ahead of time, place frosted cake in fridge for 15 minutes uncovered them take out, cover and place back in fridge for up to two days.</li>

<p>It contains cocoa powder, then the cake is drenched as Greeks do, with a  syrup contains that contains chocolate as well. For fear of anyone saying this doesn&#8217;t have enough chocolate, it&#8217;s topped with a chocolate ganache.</p>
<p>The first time I had this dessert was at a patisserie on the <a href="https://www.greeka.com/cyclades/milos/" target="_blank" rel="noopener">island of Milos</a>. Apparently Sokolatopita is a &#8220;&#8221;thing&#8221; on the island of Milos.</p>
<p>I&#8217;ve had this dessert numerous times since but that one (in Milos) was the most memorable. My recipe comes very close to that first Sokolatopita and if you love chocolate, you&#8217;ll love this!</p>

<div><em>1 cup granulated sugar</em></div>
<div><em>1/2 tsp. salt</em></div>

<div><em>3/4 cup whole milk</em></div>
<div><em>2 tsp. vanilla extract</em></div>

<div><strong style="font-size: 1rem;"><em>Chocolate Ganache Topping</em></strong></div>

<div><em>2/3 cup heavy cream (35%)</em></div>
<div><em>1  cup semi-sweet chocolate (chips or roughly chopped</em></div>
<div><em>1 tsp. vanilla extract</em></div>

<div><em>pre-heated 350F oven</em></div>

<ol>
<li>For the syrup, add water, sugar and cocoa powder into a pot over medium heat. Stir until cocoa has dissolved. Once the syrup comes to a boil, take off the heat. Add chocolate, stir in until melted. Set aside and allow to cool.</li>
<li>Add semolina, flour, cocoa powder, baking soda, baking powder in a bowl, stir, set aside.</li>
<li>
<div>To a mixer, add oil, sugar, salt and beat until white (about 5 minutes).</div>
</li>
<li>
<div>Add eggs one at time then add milk and vanilla.</div>
</li>
<li>
<div>Slowly add dry ingredients to wet.</div>
</li>
<li>
<div>Grease your pan, empty batter in pan. Bang the pan a couple of times.</div>
</li>
<li>
<div>Place in preheated 350F oven for 35-40 mins. Insert a toothpick in center of cake to check doneness. Place back in oven at 10 minutes and test again.</div>
</li>
<li>Once caked is baked, use a toothpick or wooden skewer to poke holes into the cake. Using a ladle, power syrup all over the cake. Allow to cool completely.</li>
<li>To make the ganache topping, place chocolate pieces in a bowl. Add the cream into a pot and place over medium heat. Once the cream begins to boil, take off heat and pour over the chocolate.</li>
<li>Add the vanilla and leave it alone for 5 minutes. Now begin stirring with a spatula until amalgamated.</li>
<li>Pour ganache over cooled cake, smooth over with an offset spatula. Place cake in the fridge for minimum 3 hours before serving.</li>
<li>To get nice sharp slices, heat your knife on your stovetop and slice into square pieces. A scoop of ice cream is a wonderful complement.</li>

<p>I&#8217;ve served this for dinner parties, larger groups for my Greek Supper Clubs and even at a banquet for over 300. The reaction is the same&#8230;seduced by chocolate!</p>

<p><strong>Chocolate Ganache Tart</strong></p>
<p>(serve 8)</p>
<p><strong><em>Pie Crust</em></strong></p>
<p><em>2 1/2 cup all purpose flour</em></p>
<p><em>6 Tbsp. packed brown sugar</em></p>
<p><em>3/4  tsp salt</em></p>
<p><em>½ cup melted butter</em></p>
<p><strong><em>Ganache Filling</em></strong></p>
<p><em>2 cups 35% cream</em></p>
<p><em>3 cups bittersweet chocolate, chopped</em></p>
<p><strong><em>Caramel Sauce</em></strong></p>
<p><em>1 cup granulated sugar</em></p>
<p><em>6 Tbsp. unsalted butter</em></p>
<p><em>1/2 cup heavy cream</em></p>
<ol>
<li>Pre-heat oven to 375F. Butter/grease 10 to 12 inch tart pan. In a bowl mix flour, sugar, salt then add butter and mix with a fork until moist clumps form.  Empty into pan and mold with your fingers.</li>
<li>Bake for 15 mins. Or until just golden, allow to cool.</li>
<li>Place chocolate in a medium sized bowl.</li>
<li>Pour your milk into a medium pot over medium heat. Bring the cream up to almost boiling, take off the heat and pour over chocolate. Leave alone for 5 minutes.</li>
<li>Begin to mix the chocolate and cream with a spatula until amalgamated.</li>
<li>Pour chocolate ganache into baked tart shell, smooth top with spatula. Allow to cool for one hour.</li>
<li>Place in fridge for 1 hour minimum to set.</li>
<li>For caramel sauce, ensure your three ingredients are at hand, the sauce comes together quickly.</li>
<li>Place sugar in a deep, medium sized pot over medium heat. Stir with a wooden spoon until sugar has melted.</li>
<li>Now watch for the sugar to begin to change colour. You want a nice copper colour. I<span style="font-size: 1rem;">mmediately add the butter to the pan. Whisk until the butter has melted.</span></li>
<li>Note than when you add the butter and the cream, the mixture will foam up considerably. This is why you must use a pan that is at least 2-quarts (preferably 3-quarts) big.</li>
<li>Whisk until caramel sauce is smooth. Let cool in the pan for a couple minutes, then pour into a glass mason jar and let sit to cool to room temperature.  Store in the refrigerator for up to 2 weeks. Warm before serving.</li>
<li>To serve, remove from fridge and allow one hour to come to room temp. Dip sharp knife in hot water to cut clean slices. Drizzle caramel sauce, sprinkle some sea salt and garnish with berries and fresh mint.</li>

I&#8217;ve flown in business class on occasion  and yes, the experience is better than in economy but air travel has a certain degree of stress.</p>
<p>Here in Toronto, we have a smaller airline called Porter; they fly out of Island Airport located near downtown. Destinations are as far as to Atlantic Canada, US east coast and mid west and even some southern US states.</p>
<p>Porter&#8217;s waiting lounge had a coffee corner, free bottles of water, some granola and these yummy chocolate chip shortbread cookies. I would stuff my napsack with these cookies.</p>
<p>Porter corporate dudes switched to regular shortbreads and the last time I flew with Porter, the lounge with comp&#8217;d treats and refreshments is gone. Suits be damned!</p>
<p>I miss those chocolate chip shortbreads and it was high time to make my own. We can make our own!</p>

<p><strong>Chocolate Chip Shortbread Cookies</strong></p>
<p>(makes approx. 24 cookies)</p>
<p><em>1/2 cup corn starch</em></p>
<p><em>1/2 cup icing sugar</em></p>
<p><em>1/4 tsp. salt</em></p>
<p><em>1 cup all-purpose flour</em></p>
<p><em>3/4 cup room temperature butter</em></p>
<p><em>1 cup semi-sweet chocolate chips</em></p>
<p><em>pre-heated 325F oven</em></p>
<ol>
<li>Add your corn starch, flour, sugar and salt into a sifter over a bowl and&#8230;sift. In your stand mixer with the paddle attachment, add your butter and mix on low for 2 minutes.</li>
<li>Add the dry ingredients in a slow stream until just combined. Add the chocolate chips and mix in with a spatula. Cover and place in the fridge for an hour.</li>
<li>Take out of the fridge, roll out and cut into shapes or make logs out of the dough and cut into 1/2 inch pieces  and place on parchment-lined baking sheet.</li>
<li>Bake for 18-20 minutes or until the edges just begin to brown. Allow to cool completely before transferring to a cookie tin.</li>
</ol>
<p><strong>Tip:</strong> <em>You may omit the chocolate chips and make standard shortbread cookies</em></p>

<p>It took a couple of attempts until I got it right: first I tried bittersweet chocolate and used real Ouzo to flavour the truffles: too bitter from the chocolate and soft from the alcohol in the Ouzo.</p>



<p>Next attempt I used semi-sweet chocolate and flavoured the truffles with anise extract. That worked!</p>



<p>Chocolate truffles can be pricey to buy but they are very easy to make and they are basically three ingredients: heavy cream, high quality chocolate and flavouring (usually vanilla).</p>



<p>Thee most common coating is cocoa powder, to make them look like real truffles but you can coat them in chopped nuts or coconut for variety.</p>



<p>Ouzo truffles are the answer for Greeks!</p>

<p><strong>Ouzo Truffles</strong></p>



<p>(makes approx. 20)</p>



<p><em>1/2 cup full fat cream (the kind for whipping)</em></p>
<p><em>



</em></p>
<p><em>1 cup semi-chocolate, chopped into small pieces</em></p>
<p><em>



</em></p>
<p><em>1 tsp anise extract</em></p>



<p><strong>Possible Truffle Coating</strong></p>



<p><em>shredded coconut</em></p>
<p><em>



</em></p>
<p><em>cocoa powder</em></p>
<p><em>



</em></p>
<p><em>chopped almonds</em></p>
<p><em>



</em></p>
<p><em>chopped walnuts</em></p>



<ol class="wp-block-list">
<li>Place the cream in a pot over medium heat and bring up to scalding (just when you see it bubbling), then take off the heat and pour into a bowl with the chocolate.</li>



<li>Pour the cream over the chocolate, add the anise extract and allow to sit for a couple of minutes. Use a hand mixer to fully incorporate the cream and chocolate. You have now made chocolate ganache.</li>



<li>Allow to cool to room temperature (couple of hours) then cover with parchment and place in the fridge for two hours.</li>



<li>Line a baking tray with parchment paper, take the ganache out of the fridge and use a teaspoon to portion out your ganache and place on the tray. Now quickly roll into balls with your hands.</li>



<li>Place back in the fridge to cool for 30 minutes. </li>



<li>Lay a sheet of parchment paper in a 1 inch deep pan/container and add cocoa powder or other coatings. Place truffles in pan and shuffle until coated. Place in little paper cups or in a container and cover. Store in the fridge for up to 2 weeks.</li>



<li>Serve room temperature.</li>
</ol>
