Have you ever tasted or made a cobbler? Basically it’s a dessert made of fruit in a baking vessel and topped with a batter or biscuit topping. Today I am sharing a recipe for Peach Cobbler – origin being from the US south.
Peaches will soon be in season but this dessert can be made all year ’round – we’re using canned peaches. Strain the peaches, cut them up into spoon sized pieces, place in your baking vessel, top with batter and bake. In 30 minutes you’ll have a warm dessert that screams for a scoop of vanilla ice cream to go on top.
Peach Cobbler

- Peach Filling
4 cups canned peaches, strained
pinch of salt
1 tsp. ground cinnamon
1/4 tsp. ground nutmeg
2 tsp. vanilla extract
2 Tbsp. lemon juice
1 Tbsp. corn starch
- For the Topping
1 cup all purpose flour
1 cup of sugar
1/4 tsp. salt
1 tsp. baking powder
1 large egg
1/2 cup milk
1/4 melted butter
Directions
- Pre-heat your oven to 425F. Cut/chop your peaches into bite sized pieces and place in greased 9×6 inch deep pan. Add the salt, cinnamon, nutmeg, vanilla, lemon juice, corn starch and and toss to combine.
- In a bowl, add the flour, sugar, salt, baking powder and stir to with a fork to combine. Add the egg and milk and stir until a batter just comes together.
- Spread the batter over the peaches and drizzle melted butter on top.
- Place in your pre-heated oven for approx. 30 minutes or until golden. Take out of the oven and allow to cool 15-20 minutes. Serve with a scoop of vanilla ice cream.
