Baklava Swirl Ice Cream

Baklava is one of the more popular dessert offerings in Greek cuisine and its popularity has spurned many creative hybrid desserts inspired by baklava.

While I’ve made baklava ice cream for many years, I recently catered a lunch and I felt it was time to update the concept – tasty ice cream treat, has to look good and easy to make.

Although I have an ice cream maker, I am very pleased with the no-churn method. Basically, one makes a basic vanilla ice cream, add some ground cinnamon into the ice cream mix and add the mixture into a loaf pan and add a baklava nut mixture in 3 stages.

A quick swirl with a wooden skewer and place in the freezer. Ready to make Baklava Swirl Ice Cream?

Ingredients

  • Baklava Nut Mix
  • 1 cup chopped walnuts

  • 3/4 tsp. ground cinnamon

  • pinch of ground clove

  • 1 tsp. brown sugar

  • 1/3 cup warm Greek honey

  • Ice Cream
  • 4 cups full fat whipping cream

  • 2 Tbsp. vanilla extract

  • 1 can sweetened condensed milk

  • 1 tsp. ground cinnamon

  • pinch of salt

  • 1/4 cup Greek honey

Directions

  • To make the baklava nut mx, add the walnuts, cinnamon, clove, sugar and pulse until incoporated and the walnuts are chopped to your liking. Set aside
  • For the ice cream, add the cream and vanilla into a bowl and use a hand mixer or stand mixer to whip into soft peaks. Add your condensed milk, cinnamon and mix for a couple of minutes. Add a pinch of salt and honey and mix for another minute.
  • Warm up your honey for the nut mix and add and stir to combine.
  • Like a loaf pan (or similar container) with plastic wrap and spread 1/3 of ice cream followed buy add 1/3 of nut mix. Use a wooden skewer to swirl the nut mix. Add another layer of ice cream followed by another 1/4 of nut mix – swirl.
  • Add the remaining ice cream and dot the top of ice cream with remaining nut mix. Cover with plastic wrap and place in your freezer overnight to set.
  • In the meantime, you can make a phyllo cup or kataifi nest to serve/present your ice cream.
  • The next day, place a scoop of ice cream in your phyllo or kataifi cup, drizzle with honey and top with chopped walnuts or pistachios and serve.

Notes

  • For a WOW presenatation: crumble or chop some baklava and also top your ice cream with that.
