Halloumi cheese is one of my favourites and I am sharing this easy recipe/instruction for making a Halloumi in a pita.
The cheese is the protein here, making it a good substitute for the usual meat filling.
I like pan-searing the Halloumi but you may grill or even fry if you wish.
Here, I am cutting the Halloumi into batons so they fit better into the pita wrap. Enjoy!
Halloumi in a Pita

2 thick slices of Halloumi cheese
sliced tomatoes
sliced red onions
some leafy greens (say baby arugula)
1 pita bread (try making your own)
Directions
- Cut your Halloumi into batons (giving you four).
- Place a non-stick pan over medium heat. Treat the pan with cooking spray or drizzle some oil. Place Halloumi batons in the pan and brown on all four sizes until golden.
- Remove from heat. Transfer your Halloumi to a plate.
- Warm pita bread on both sides (using same pan) and remove from heat.
- Place a square of aluminum foil under your pita bread.
- Assemble your wrap by smearing some tzatziki, place Halloumi in the pita followed by tomatoes, onions and leafy greens. Use the foil to help you roll your pita and plate/serve.
