Being Greek, you’re either in the hospitality industry or you have relatives in the hospitality industry. My father worked in restaurants most of his life, my mom worked for a restaurant for a few years and I had a few restaurant jobs in my teens.
Food blogging got me into cooking more, sharing recipes and it spurned my love of cooking and sharing food.
This recipe is from my relatives in Hamilton, Ontario – they used to have a large banquet facility. On occasion I would sleep over to hang out more with my cousins and one morning, my aunt made us waffles and maaaan, they were good!
This recipe is a riff off of that waffle recipe, enjoy!

Homemade Waffles

- Dry ingredients:
1 1/2 cups all-purpose flour
1/2 cup cornmeal
3 tsp. baking powder
1/4 tsp baking soda
1 tsp. salt
- Wet ingredients:
2 cups milk
1/4 cup sugar (or honey)
1/2 cup veg oil or melted butter
2 large eggs
1 tsp vanilla
Directions
- Into one bowl, add all the dry ingredients, stir with a fork and set aside.
- Into another (large) bowl, add the wet ingredients and whisk to combine.
- Now add the dry into wet ingredients while whisking until batter is just smooth.
- Pre-heat your waffle maker. When ready, treat your waffle maker with a bit of cooking spray, pour into 1/4 to 1/3 batter.
- Cook waffles according to your machine’s instructions. Repeat with remaining batter.
- Serve warm (re-heat in the oven) or store in zip-lock bags and place in your freezer for future use (toast or reheat in oven).
- Smear some butter, pour maple syrup and enjoy.
Get Fancy:
- make bacon waffles by par-baking your bacon slices (cooked but not crisp) then place bacon strips onto the batter in your waffle maker. The bacon will cook in the waffles.
