Every now and then, we crave the dishes we had as kids and last year I found myself craving “shake n’ bake” pork chops. I didn’t want to use store bought breading mix, so I came up with my own.
I also didn’t want to bother with the usual flour/egg/bread crumb dipping station so I tried my hack of brushing mayo on the pork chops. It works!
Mayonnaise contains fat/egg and it makes for a good glue for the breadcrumbs to adhere to. This dish is something you can make for weeknights or the weekend. it’s easy, economical, delicious and appreciated by adults and kids alike.
Sounds like a fine family meal to me.
Shake N’ Bake Pork Chops

- For the seasoned breadcrumbs
2 cups plain bread crumbs
2 Tbsp. cornmeal
2 Tbsp. corn starch
2 Tbsp. grated parmesan cheese
2 Tbsp. dried parsley
2 tsp. Italian seasoning
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. black pepper
1 tsp. sea salt
- For the pork chops
pre-heated 425F oven
6 bone in pork chops
sea salt and ground pepper
approx. 1/2 cup mayonnaise
Directions
- Add all your breadcrumb ingredients in a bowl. Stir with a fork to combine.
- Pat-dry your pork chops with paper tower. Season with salt and pepper then lightly brush both sides of your chops with mayo.
- Add one cup of your seasoned bread crumbs into a large paper bag. Add two chops, roll the top of the bag up and shake it a few times. Open the bag to ensure the chops are coated evenly. If not, shake the chops in the bag again.
- Repeat with the remaining chops, replenish breadcrumbs in the bag as needed.
- Place a wire rack on a sheet pan and place the pork chops on the rack. Discard the paper bag (plus any leftover breadcrumbs in it).
- Place the pork chops in your pre-heated oven on the lower middle rack for 15 minutes. Take the chops out and flip, bake for another 15 minutes.
- Take out of the oven, allow to rest 5 minutes. Serve with my mashed potatoes or scalloped potatoes.
Notes
- Ovens can vary so the cooking time may vary here as well. The top of your pork chop should be golden and crisp after 15 minutes. If not, place back in the oven for 5 minutes intervals until it is. Flip your pork chops and bake accordingly
- SHORTCUT: Yes you can buy seasoned breadcrumbs, this Pastene brand is very good
