Greeks can be found throughout the world: there are over 10 million living in Greece and about another 10 million in abroad (Europe, Africa, Australia/NZ, Canada/US, South America and Asia). Told ya….Greeks all over the world.
In cities where there is a sizeable Greek community, one will also find a Greektown, drawing in Greeks and philhellenes who patronize specialty shops, picking up their Greek pantry items, seeing the old neighborhood and dropping into one of the eateries for a bite.
The menu at these restaurants will have a Village (Horiatiki) Salad (the real Greek salad) and what I call the Greektown salad, the one with the inclusion of lettuce in the salad. This salad is usually accompanied by a creamy Feta dressing and confession: I do like it!
Today, I am offering up my version of this creamy dressing and you can top onto to any salad combination you like.
Greektown Creamy Feta Dressing
(makes about 2 cups)
- Add all the ingredients into a tall plastic measuring cup and with your hand blender, process until incorporated. Taste and adjust to your tastes.
- Arrange salad ingredients in a large salad bowl. Spoon over dressing and top with more crumbled Feta cheese, serve.
*Cover and store any unused dressing in your fridge for up to 10 days.
