We’re more than halfway through 2020, which is a good thing. However, it may be a long winter and the one thing I know I’ll be doing is enjoying some great food at home.
Today, I am sharing an appetizer I served 3 years ago at one of my Supper Clubs. It’s a wheel of Brie cheese wrapped in grape leaves. I always have the jarred variety in my pantry so I can make this on a whim.
The Brie gets wrapped in grape leaves and baked in the oven until warm and gooey. I garnish with dried fruits, perhaps some nuts and some crusty bread to smear this cheezy goodness on. Enjoy!
Brie Baked in Grape Leaves
(serves 4)
approx. 4-6 large grape leaves (from a jar)
1 wheel of Brie cheese (about 7 oz), room temp.
olive oil
Garnishes
chopped dried apricots, cranberries and raisins
microgreens
- Pre-heat your oven to 375F. Take your grape leaves out of the jar, rinse and pat-dry. Cut off the stems and place the leaves in a circle, overlapping each other.
- Drizzle olive oil on your brie and rub it all over the cheese. Place cheese on top of grape leaves and wrap, ensuring the cheese is completely enclosed.
- Place the wrapped brie on a cookie sheet and place in your pre-heated oven. Bake for 8-10 minutes.
- Use a spatula to lift and slide baked cheese on to a platter. Garnish with dried fruit, nuts and some microgreens. Serve with warm crusty bread, cut in to the cheese and dig in!
