These are a quick and easy appetizer you can make this week. You can go all-Feta but I really like when Feta is paired with a flavourful cheese like Graviera. Often called the “Greek Gruyere” as it’s also a cheese that holds up well and melts nicely.
When making these croquettes, use cold cheeses so that you can mix everything easier.
Greek Cheese Croquettes
(makes 8-10)
1/2 cup crumbled Feta cheese
1/2 cup grated Graviera cheese
¼ cup all-purpose flour
1 large egg
approx/ 1/2 cup sesame seeds
Oil for frying
- Into a medium bowl, add the cheeses, flour and crack the egg in the bowl and mix with your hands until incorporated. Roll the mixture into balls then coat in sesame seeds.
- Add about 1 inch of oil into a deep skillet and bring up to 365F. Place cheese balls in the oil and fry on all side until golden.
- Remove with a slotted spoon and reserve on a paper-towel lined plate. Serve warm or room temperature.
