I love fried food and the king of fried food are French Fries. Some are intimidated, some are lazy, some don’t like frying in their home, some avoid it. Many love it.

This is for those who love crispy fries, each and every time. This method is a 2-parter: boil the potatoes in salted water then hand-smash the pototoes  and fry in oil.

Triple-tested. Works each and every time!

Hand Smashed Potatoes

(serves 4)

8 medium potatoes (Yukon Gold or Russet), skin on

salt, pepper

vegetable or olive oil for frying

  1. Place your potatoes in a medium pot with enough water to cover the potatoes by an inch. Add about 4 tsp. salt and bring to a boil. Simmer until the potatoes are cooked. Insert a knife into the potatoes to check for doness.
  2. Drain the water from the potatoes. When cool enough to handle, gently press down on the potatoes to smash them. They will break into pieces.
  3. Pre-heat your deep-fryer or add oil into a deep pot (3 inches up the sides) and bring up to a temp. of 350F.
  4. Carefully drop your smashed potatoes in the hot oil and fry until crisp and golden.
  5. Remove and place in bowl lined with paper towel. Season with fleur de sel, fresh ground pepper, dried Greek oregano and serve.

Pro Tip: you may drizzle olive in lots of olive oil, toss, season with salt and pepper and roast in preheated 400F oven for approx. 25 minutes or until golden and crisp.
