My favourite of the spoon sweets is Sour Cherry (Vissino glyko). It’s not as sweet as the others and it pairs well with so many things like ice cream, yogurt, the best topping for cheesecake and I’ve even used it as part of a BBQ sauce!
Like many spoon sweet recipes, they are easy but with sour cherry, they are in season for a short period. So, either one makes a small batch at home and/or you just end up buying a jar from a Greek specialty store or local supermarket.
Here in Toronto, one can buy sour cherries in light syrup in a jar. If you can find this product, you can easily make sour cherry spoon sweet on a whim!
Short-Cut Sour Cherry Spoon Sweet
1 jar of pitted sour cherries (796 ml)
sugar
1 tsp. vanilla extract
- Strain the liquid from the cherries and reserve. Measure out the cherries in a cup and place in a medium pot. Now measure an equal amount of sugar (as the cherries) and add into the pot along with 3/4 cup of the cherry juice (you may discard the remainder) and stir.
- Bring to a boil, reduce to a simmer and cook for 20 minutes.
- Place a plate in the freezer to test consistency of your spoon sweet and place a spoonful on the cold plate to test. Once desired consistency is achieved, remove from the heat, add the vanilla extract and allow to cool completely.
- Place in a jar and store in the fridge.
