Here in Ontario (where I reside), strawberries are at their peak in June/July and I recently went with my niece and nephew to pick our own at a farm. Local strawberries (local anything) is best and I am enjoying the basket I picked myself.
I’ve paired strawberries and Feta before but this time I am also using strawberry puree in the dressing as well. An easy recipe that showcases this much loved fruit. Eat your salad they say.
Salad With Strawberry Dressing and Feta
(serves 4)
Dressing
1/2 cup ripe strawberries, stems removed and halved
1/2 tsp. Dijon mustard
3 Tbsp. honey
3 Tbsp. red wine vinegar
1/3 cup extra-virgin olive oil
salt and pepper to taste
Salad Components
6 cups of salad greens (baby arugula, baby spinach, bib lettuce)
1 cup ripe strawberries, stems removed and sliced
1/2 cup crumbled Feta cheese
1/2 cup toasted walnuts
- In a food processor, add the strawberries, mustard, honey and vinegar and process until smooth. Now add add a slow stream of olive oil until emulsified. Add some salt and pepper, pulse to blend. Reserve.
- To a salad bowl, add greens, sliced strawberries, feta, and toasted walnuts. Toss with dressing and serve immediately.
