A recipe update here. This recipe was posted back in 2007…the first of my food blog’s existence!
The recipe hasn’t changed but I have better, juicier photos to bring home just how tasty these Double (twice baked) Potatoes are.
What I have done here is bake a russet potato, scoop out the meat of the spud, mix it with some tasty ingredients and the broil it.
Eating such a potato is not part of an everyday diet plan but it’s worth making to treat yourself and guests while weekend entertaining.
Double Baked Stuffed Potato
(makes 8)
4 large Russet or baking potatoes
1 cup of chopped crisp bacon
4 scallions, finely chopped
1 stick of unsalted butter (room temp) or 1/4 cup olive oil
1/4 cup sour cream + 1/2 cup to serve with potatoes
1/2 cup of old cheddar, grated + 1/2 cup for topping
unsalted butter or olive oil
salt and pepper to taste
sour cream for garnish
chopped fresh chives or scallions for garnish
Pre-heated 400F
- Rinse and scrub the skins of your potatoes. Rub the skins of the potatoes with some vegetable oil and wrap in foil. Place on a baking sheet and in your pre-heated oven for 1 hour (you should be able to insert a knife without resistance). Allow potatoes to cool for 30 minutes.
- Cut potatoes lengthwise in half then use a large spoon to scoop and scrape out the potato (leaving skins in tact) and place in a large bowl. Place potato skins back on your baking sheet.
- To your potatoes add your butter (or olive oil), bacon, scallions, cheese and mix well while smashing the potatoes. Adjust seasoning with salt & pepper.
- Spoon your potato mixture back into the skins of the of the potatoes. Top each potato with more grated cheese.
- Place back in your pre-heated oven and bake for 15-20 minutes or until potatoes are warm, cheese has melted.
- Top with chives/scallions and serve with a dollop of sour cream.
PRO TIP: Assemble your potatoes ahead of time (day before or earlier in the day) but allow the potatoes an hour to return to room temp. before baking.

Oh yes, love these things, but true, not exactly healthy! Although they do have scallions. Scallions are healthy. Okay, then.
We love these stuffed potatoes although it has been a while since I last baked them. I usually cover them with foil and bake them in the oven and use prosciuto instead of bacon, but I had no idea about the sour cream. Yummy!!
The glorious potato, what would we do without them… This is one of my favorite ways to have a potato..totally stuffed! Nice job:)
