French toast are usually reserved for weekends but these are unusual times (Pandemic Lockdown) where weekdays and weekends are blurred. You have more time on your hands so I suppose one could make Bananas Foster French Toast on any day of the week.
Bananas Foster was comes from New Orleans and basically its bananas in a pan with butter, brown sugar, cinnamon and banana liqueur. It’s also flambed table-side with some rum and topped with vanilla ice cream. I’m gonna skip the flambe and ice cream for breakfast but as they say in New Orleans…”do what’cha want”!
Bananas Foster French Toast
French Toast
3 large eggs
3 Tbsp. sugar
3/4 cup whole milk
1/4 cup orange juice
1 tsp. vanilla extract
1/2 tsp. ground cinnamon
8 slices of Tsoureki (Greek Easter Bread) or challah or brioche or Texas toast
butter or cooking spray (for frying French toast)
Bananas Foster Topping
4 Tbsp. butter (1/2 stick)
1 cup brown sugar
1/2 tsp. ground cinnamon
1/4 cup banana liqueur
4 bananas (just ripe, not overly ripe), cut into thick slices
(optional 1/4 cup rum to flambe)
- In a large shallow bowl, add cracked eggs, sugar, milk and orange juice, vanilla and cinnamon and beat/whisk well. Place a large non-stick skillet on your stovetop over medium heat and add the butter. Meanwhile, dip the bread into the egg mixture and push the slices into the mixture to soak in for a minute.
- Cook in the pan for 2-3 minutes a side in batches and repeat with remaining bread(I recommend keeping the French toast warm in a pre-heated 250F oven).
- Wipe/clean your skillet and add your butter, sugar and cinnamon. Turn the heat on to medium-low heat and stir with a spatula until sugar has dissolved.
- Add the banana liqueur and stir in. Add the bananas and cook for a couple of minutes or until they’ve just browned. Till pan to spoon some of the sauce over the bananas. You may add rum into pan to flambe (optional).
- Take your warm French toast out of your oven, plate and serve Bananas Foster on top.
