This is an updated recipe that uses the milk and white vinegar hack to make buttermilk and….buttermilk-ish pancakes. I usually don’t have buttermilk around but I make pancakes almost weekly.

This recipe came to me via Instagram @theyoungnonna who shared Chef Danny Smiles (Le Bremner Chef) recipe.

The recipe makes 6-7 pancakes and doubling up is a no-brainer if you’re serving a larger group.

Best Pancakes Recipe

(makes 6-7 pancakes)

1 1/2 cups whole milk
1 1/2 Tbsp. white vinegar

1 large egg
4 Tbsp. vegetable oil

4 Tbsp. white sugar

pinch of salt
1 1/4 cup all-purpose flour
1 tsp. baking powder
1/2 tsp. baking soda

unsalted butter to top pancakes

maple syrup

  1. Pour milk into a medium-sized bowl with the vinegar, stir in and let stand for 15 minutes. Add the egg, oil, sugar and salt and stir in.
  2. To another bowl, add your flour, baking powder and baking soda and mix with a fork. Add wet to dry and mix (okay if some lumps).
  3. Heat a large not-stick pan or griddle to medium heat. Spray with cooking spray and ladle in your batter to make pancakes. Flip when golden, reserve and repeat with remaining batter.
  4. Serve pancakes topped with pads of butter and real maple syrup.

  4. Oh pammycakes, what can’t you fix? I’ve never used pammycakes to get me out of a jam, but I am an old married broad and don’t get into those much these days. :)

  6. I have a strict policy that on weekends breakfast is *always* served in bed. Sometimes it’s eaten right away, and sometimes it has to wait :-)

    Your pancakes look amazing – fortunately, I just picked up some blueberries today … I must be psychic. That’s a pretty amazing slab of butter on top … yum …
