I am BIG on burgers and like any other sandwich (yes burgers belong to the sandwich realm), you need good bread to make a great burger.
These brioche buns are easy to make, taste better than anything I’ve bought at the supermarket and they will make your burgers sing like Bocelli!
Brioche Buns
(makes approx. 10-12 buns)
3 Tbsp. warm milk
2 tsp. active dry yeast
2 1/2 Tbsp. sugar
2 large eggs
3 1/3 cups all purpose flour
1 1/2 teaspoons salt
2 1/2 Tbsp. unsalted butter (room temp)
1/4 cup sesame seeds
Pre-heated 400F oven
- Into a measuring cup, add 1 cup warm water, milk, yeast and sugar. Let stand until foamy, about 5 minutes. Beat one egg in a small bowl with a fork.
- In a stand mixer, mix flour and salt with a fork. Add butter and rub into flour between your fingers, making crumbs. Add the yeast mixture and beaten egg and attach dough hook to mix until dough forms and just comes off sides of bowl.. Scrape dough onto counter and knead for 5 minutes.
- Shape dough into a ball and return to bowl. Cover bowl with plastic wrap and allow to rise in a warm place until doubled in size (1 to 2 hours).
- Line a baking sheet with parchment paper. Divide dough into 8 equal parts (120 gr. each) and roll each into a ball and place 3 inches apart on baking sheet. Let buns rise in a warm place for 1 to 2 hours (I use proofing function in my oven).
- Beat remaining egg with 1 Tbsp. water and brush top of buns and sprinkle with sesame seeds. Bake until golden brown, about 15-20 minutes. Allow to cool completely before using for burgers.
Top Tip: after your buns have cooled to room temp, bag and freeze for future use
Pro tip: for slider buns, divide into 16, bake 13-14 minutes
