This past Sunday, I cooked a meal inspired from the cuisine of Naoussa to complement the wines of Thymiopoulos Vineyards. Our guests loved the wines and the Moschato Tsipouro from Tirnavo. My thanks go out to Apostolos Thymiopoulos and Nicole Artopoulos of Victory Wines here in Toronto.
The dinner was set in Toronto’s St. Lawrence Market Kitchen, 50 guests came to enjoy an evening of Greek food and wine. Thank you once again to Krinos Foods Canada for providing many of the ingredients used in preparing the dishes.
No Greek meal can me complete without the use of olive oil and my thanks go out to my good friend Manos Maragkakis of Nisos Importing for supplying the delicious Cretan olive and olives pastes make of green and black olives.
Thank you to Gabrielle of the Market Kitchen for all her help, our servers Meaghan, Andria and Paula and Chef Carmine Accogli who helped me prepare the dishes.

Appetizers – Keftedakia (meatballs) with Makalo sauce
Mushroom caps stuffed with Krinos Vlahotyri cheese, ginger, chives
Smoked Trout and Gigantes Beans puree on crostini with pickled onion garnish
Paired with Thymiopoulos Boarding Pass Malagouzia
1st course – Roasted beet salad with seasonal greens, balsamic/citrus dressing, herb goat cheese and Feta
Paired with Thymiopoulos Boarding Pass Malagouzia
2nd Course – Varenika Pasta Filled with Smoked Eggplant with Krinos Greek yogurt, chive butter
Paired with Thymiopoulos Young Vines Xinomavro (unoaked)
Main Course – Milk Braised Pork (Prassoselino) with Leeks and Celery on a bed of garlic mashed potatoes
Paired with Thymiopoulos Earth & Sky Xinomavro (oaked)
Dessert – Revani Syrup Cake from Veroia
Paired with Tsipouro Merikiklidiko with Muscat
