Sometimes, simplicity triumphs – especially when the flavour is so damn good! Here, I’ve recreated an ice cream I had years ago at a parlour and I found myself craving it. It was a banana and marshmallow flavour and to this day, I’ve yet to see it reappear in ice cream shops.
They call it ice cream because…there’s cream in it. Here, one simply has to whip the cream and condensed milk (with some real vanilla) and then fold in the mashed ripe banana. So simple, so delicious and it can be made with or without an ice cream maker.
Easy Banana Ice Cream
2 cups of whipping cream (500 ml)
1 can of condensed milk (300 ml)
1 pods of one scraped vanilla bean
1 cup mashed very ripe banana
Garnish
small marshmallows
- Using a stand mixer or hand mixer, place the cream and condensed milk, vanilla in the bowl and whip for 5-6 minutes or until you soft peaks.
- Add the mashed banana and gently fold-in then empty into one or two tubs and cover and place in your freeze for at least one day. Serve from the freezer.
