I really enjoyed the article written by Miss Kochilas; all I can say is most of what she said applies to Lebanese food as well; I had this same conversation with a friend in Beirut and he, a gastronome, was telling me that there is a reason behind our simple mujaddara (lentil and rice dish) in that there is a starch in the rice that helps the body absorb the iron in the lentils. (I am endlessly fascinated by this)
