This is the fourth and final segment of the interview I conducted with Chef Michael Psilakis.

Michael talks about some Greek ingredients he feels will be in the forefront of Greek cooking, Michael shares with us his plans for opening up a restaurant in Greece, Michael answers a couple of questions from my readers and finally, he shares the spotlight and pays homage to other restauranteurs who have helped bring Greek food to the forefront.

    I am writing a book about global cuisine and would like to talk to you about Greek culture and cuisine, as somebody of Greek descent. I would also like to know what you think is essential Greek cuisine.
