When one visits Greece, one drinks. When one drinks in Greece….one eats! Almost always, when out for a drink, the server will provide you and your friends with something to nibble on. It could be nuts, veggies, cold cuts or potato chips.
The Greeks have their own tastes and this is even evident with their “junk food”. The most common potato (and tastiest) flavour potato chips has to be sea salt and oregano. I can eat a whole bag!
I’ve researched on the ‘net and came up with my own way to make Potato Chips…in the oven!
Oregano & Sea Salt Potato Chips
2 medium-sized Yukon Gold potatoes, peeled and thinly sliced (I used a mandoline)
olive oil
sea salt
black pepper
dried oregano
- Preheat your oven to 400F. Treat a baking tray with olive oil. Toss your potato slices in olive oil and lay out on the baking tray (no overlapping).
- Bake until golden-brown, approx. 15 minutes.
- Season with salt, pepper and oregano and transfer to a rack to cool and crisp well.
These look absolutely divine…potato chips have to be my favorite junk type food. With oregano? Yum. :) I’ve never made my own chips before…I may just have to give these a go! :) Thanks for sharing a great recipe. :)

Only that way I wouldn’t get to taste them as they packed on the calories. And taste these I will! At least once. Combining oregano with the potato slices is pure genius.

Thanks for stopping by my blog. Soviet Safeway is what my landlord, and apparently much of DC, calls the grocery store in my neighborhood because they never have anything. I posted about it and someone e-mailed me to say they used to live by Soviet Safeway and gave me directions to another market. I guess it’s an established landmark.
I had packaged sea salt chips on the ferry between Santorini and Naxo. Great idea to make your own and have a piece of Greece with you.
I dream of getting a real-life mandolin slicer to make perfect chips (in the oven, of course!). I add the sea salt over the potatoes as they are roasting, it sort of penetrates the fries :-P I envy your 31 degrees in Toronto over Thanksgiving… we were not that lucky in Quebec… please forward the weather :)
