Rocket, Pear and Feta Salad

IMG_7455STOP THE PRESSES!!! Toronto’s experiencing some seasonal hot weather and it’s a long weekend up here, in honour of Lord Simcoe.

I’ve been busy getting ready for my vacation to Greece, getting my affairs in order, making sure all my “ducks are in a row” and eating with what’s left in the fridge.

When I saw that this recipe of rocket (arugula), pears and Feta matched what I had at hand (plus the warm weather), it was an easy sell to try this salad.

The site is called “Kerasma”, which in Greek means “to treat”. This site treats the world to Greek food, it’s marvelous ingredients as presented by Greece’s contemporary chefs and authorities on Greek food.IMG_7450

You’ll find alot of beautiful dishes, plated exquisitely but still paying homage to Greek ingredients and the dishes we as Greeks grew up with.

To make this salad, I grabbed a large handful of rocket and washed and dried it, cut a pear with one of those fruit/apple slicers, squeezed a little lemon juice on the pear slices (so they don’t brown on me).

You can choose any vinaigrette you like but I always have my favourite combo of 3 parts olive oil to 1 part acid, spiked with some Dijon mustard, a little honey and finished with salt and pepper.IMG_7456

Assembly is easy; In another bowl, toss your greens with the vinaigrette and place on your plate. Place the pears on the leaves (arrange as you like), sprinkle some chopped pistachios, crumble some Feta cheese, drizzle with extra-virgin olive oil, some dabs of good, sweet Balsamic vinegar and a crack or two of fresh black pepper.

This was lunch today…make it yours!

  2. This is exactly the kind of salad that I enjoy! A little sweet, a little salty and a whole lot of delicious! I think I might toss in some dried cranberries and a few chopped walnuts too. Mmmm!

  11. A nice variation is to grill the pears. I love grilled fruit in salad, especially when the warm fruit meets some cold cheese.
